Dum Pukht aspires to revive India’s royal culinary traditions with its slow-cooked recipes from royal courts across India, from Kashmir to Hyderabad to Awadh. It is ancient slow-cooking method uses a round, heavy-bottomed pot – called a handi, in which food is tightly sealed with dough and cooked over a slow fire over a long period of time.Cooked slowly, the food retains its entire natural aroma and becomes imbued with the richness of flavors that distinguishes the “Dum Pukht” cuisine.
