When I cook I always start with an ingredient not with recipe, starting with the ingredient I build a combination of flavors and aroma. I’m obsessed for food pairing, i’m obsessed to find the right balance of the flavors, i’m obsessed to find an healthy direction( i don’t like to use extra salt, i don’t like to use extra fat). Every ingredient has its personality and must be respected and never covered: it means that i prefer to extract the natural flavours and reduce fats and salt. What to Expect When Visiting Roma, Lazio, Italy

This cooking class in Rome will teach you the right cooking techniques to make your own Italian homemade pasta. We will make 2 different shapes of pasta all’uovo(egg pasta), from scratch!!!
– Tagliolini
– Stuffed pasta: cappelletti
For Tagliolini we will makeTomatoes sauce.
For stuffed pasta we will make traditional roman recipe: Cacio e Pepe sauce (pecorino cheese and black peppers).
I’ll show you how the “pasta maker” works.
Meanwhile we will have fun to make pasta you will taste as Aperitivo:
– some selected cheeses with different kinds of homemade jams;
– special bruschetta with extravergine olive oil from Puglia (south of Italy)
To round off lunch or dinner: a very delicious sweet surprise!!!
I will offer you a glass of selected Italian wine.
