Local host Nazih made the decision to retire early in order to devote more time to his passion: buy seafood from the auction and transform them into delightful dishes to share with family and friends. To sharpen his cooking skills, Nazih has taken lessons at the Tokyo Sushi Academy, Le Cordon Bleu, and Rick Stein’s Cookery School in the UK.

• Fish Cake – Pattie of steamed white fish (sea bream, grouper, hake or meager) with potato, red onion, capers, mayonnaise, mustard
• Gyoza – Gyoza wrapper filled with minced white fish (sea bream, grouper, hake, meager or mahi mahi) with grated ginger and minced chives
• Sea Bream Ceviche – Sea bream cut into cubes, lightly salted then marinated in lime mixed with red onion, corriander, avocado

• Seafood Paella – White short-grain rice cooked with seafood broth, chorizo sausage, red bell pepper, peeled shrimp, calamar and white fish
• Grilled Octopus – Grilled octopus served with extra virgin olive oil mashed potato and topped with lemon, vinegar, red onion, garlic, capers, basil dressing
